Nestled in the Chimacum Valley on Washington's Olympic Peninsula, Chimacum Valley Dairy is a small farmstead creamery with a big passion for the craft. Owners Amy Rose and Bruce tend their herd of goats, source exceptional raw cow's milk from a neighboring farm, and turn it all into something extraordinary — one carefully made wheel at a time.
Bruce, a trained chef turned self-taught cheesemaker, develops every recipe by hand, adjusting with the seasons, the weather, and what the animals give. The result is a small but distinctive lineup of raw milk, natural-rind cheeses that don't fit neatly into any category — because they're truly their own. Coastal. Washington. Ours.
